The Origins of TAU Tequila

How Is Tequila Made? TAU Tequila is a brand born in Jesús María, Jalisco. In our tequila-making process, we use agave grown and harvested in the red soil of our region (Los Altos de Jalisco), rich in minerals that produce a truly unique tequila. Our brand is inspired by the Wixárika culture, an ancient culture still thriving today. Through our label, we aim to share the cultural and heritage wealth of the Wixárika people. We invite you to learn more about their rich history and worldview.

Agave Selection

With care and dedication, we select mature agave from Los Altos de Jalisco, which is the foundation of our tequila.

Cooking

Using traditional methods, we slow-cook our agave in masonry ovens before extracting the agave juices and moving them to stainless steel tanks for fermentation.

Fermentation

During fermentation, we play classical music to create a pleasant environment, allowing the yeast to peacefully and comfortably convert the sugars into alcohol.

Distillation

Our tequila undergoes double distillation in copper stills, where it develops its distinct character and profile. During this process, we separate the heads and tails, preserving only the heart of the distillation, where the true essence of the agave is transformed into tequila.

Resting and Aging

The resting and aging process takes place in American oak barrels, which have only ever been used for our house tequila.
